It can be tough to find simple, healthy recipes that actually turn out well. Sometimes you need a little instruction on how to cook chicken or how to season the vegetables the right way, so they will taste good enough for you to continue eating them.
That is the key to maintaining a healthy diet, I have found. You have to learn how to cook, and more importantly, learn how to cook things that you actually enjoy eating. Because in the end, if you don’t practice your cooking skills, and all you know how to cook is rubbery chicken and bland veggies, I swear on my three legged dog Baxter that you will never make it. It needs to taste good, so when you are faced between the daily decision of eating that boxed pizza for dinner, or eating a healthy meal that you prepared, you will make the right decision, because it is not a chore!
To help you prepare and cook healthy meals that taste good, BassFit.com is going to be posting healthy recipes throughout the year for you to try your hand at. Here is one of our first suggestions, stir fry chicken and vegetables.
Prep Time: 10 Minutes
Cook Time: 10 Minutes
Total Time: 20 minutes
-1 pound of boneless chicken breast
-2 cups of broccoli
-1 large zucchini (or squash)
-1 yellow onion
-3 cloves of garlic (crushed)
-2 tbs of olive oil
-1 tbs of ranch seasoning, Cajun seasoning, or soy sauce
-1 tsp salt
-1 tsp black pepper
-cut chicken into ½ inch slices
-cut vegetables into slices or circles, however you would like
- Heat olive oil in pan on stove-top, on high heat
- When pan is hot, add in chicken, vegetables, and seasoning
- Cook until chicken is golden and vegetables are slightly soft, stirring pan every minute or so
- Serve with white/brown/jasmine rice or sweet potatoes (or for low carb, serve by itself)
This recipe is very simple and I use it almost every week, adding in variations of my choosing. Every week that I have been making this meal, along with several other healthy meals, I have gotten better and better at making healthy food that taste good! I found that it is not that hard!
